Great American Cookie Company
Makes 3 Dozen
1 1/4 cup butter, slightly softened
2 cups sugar
2 teaspoon vanilla
2 cups flour
3/4 cup Hershey's Special Dark cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
12 oz white chocolate, cut roughly into chunks
Preheat oven to 350 degrees. Line baking sheet with parchment paper and set aside.
In a medium bowl, combine flour, cocoa powder, baking soda and salt. Set aside.
In the bowl of your mixer, cream butter and sugar on medium speed until fluffy and light in color -- about one minute. Add eggs one at time, beating after each. Beat in vanilla. With the mixer set on low speed, slowly add flour mixture until beat in completely. Fold in white chocolate chunks.
Scoop with a large cookie scoop onto prepared baking sheets, 3 inches apart. Bake for about 9 minutes, or until edges are just set. Middles will not look done -- they will set upon cooling.
